Eating Healthy on a Budget

Autumn is just around the corner and late summer produce is at its peak. Enjoy carrots and broccoli for color, flavor and texture in this hearty casserole. Serve apples for dessert.

Chicken Divan Casserole
Makes 6, 1 1/2 cup servings
Prep Time: 20 minutes
Cook Time: 45 minutes

1 cup GIANT uncooked rice
1 cup coarsely shredded GIANT carrots
1 lb GIANT boneless, skinless chicken breasts
2 Tbsp GIANT butter
3 Tbsp GIANT all-purpose flour
1/4 tsp GIANT salt
GIANT black pepper to taste
1 cup chicken broth
1/2 cup GIANT nonfat milk or nonfat half and half
1/4 cup apple juice or dry white wine
1/3 cup plus 2 Tbsp GIANT grated Parmesan cheese, divided
1 lb GIANT frozen broccoli florets

Preheat oven to 350 degrees. Lightly grease a 12 x 8 inch baking dish. Prepare rice according to package directions. Stir in carrots. Spread mixture in prepared pan. Spray large skillet with cooking spray. Heat over medium-high heat. Brown chicken breasts about 2 minutes on each side. Arrange over rice. To prepare sauce, melt butter in a saucepan over medium heat. Whisk in flour, salt and pepper to taste; cook and stir for 1 minute. Gradually whisk in broth and milk. Cook and stir until mixture comes to a boil. Reduce heat; simmer for 2 minutes. Stir in wine or juice. Remove from heat. Stir in 1/3 cup of cheese. Arrange broccoli around chicken. Pour sauce over top. Sprinkle remaining 2 tablespoons of cheese over chicken. Cover with foil; bake for 30 minutes. Remove foil; bake for 10 to 15 minutes or until internal temperature of chicken reaches 165 degrees.

Nutrition information per serving: 320 calories, 7 g fat, 4 g saturated fat, 60 mg cholesterol, 450 mg sodium, 35 g carbohydrate, 3 g fiber, 27 g protein.
